- 1 cup tri-color quinoa
- 1 can (15 oz) black beans, drained and rinsed

Instructions
- Rinse quinoa under cold water. In a saucepan, combine quinoa with 2 cups of water. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes until fluffy.
- While quinoa cooks, chop the bell pepper, red onion, and cilantro.
- In a large bowl, combine cooked quinoa (let it cool slightly), black beans, chopped veggies, cilantro, lime juice, olive oil, salt, and pepper. Mix gently.
