  • 1 can (15 oz) kidney beans, rinsed
  • 4 cups low-sodium vegetable broth
  • 2 medium carrots, chopped
  • 2 stalks celery, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 2 bay leaves
  • Salt and black pepper to taste
  • Optional: Fresh parsley for garnish

Instructions

  1. In a large pot over medium heat, drizzle olive oil and sauté onions, carrots, celery, and garlic until softened (about 5 minutes).
  2. Push veggies aside and add crumbled Italian sausage. Cook until browned (6–8 minutes).
  3. Stir in the kidney beans, vegetable broth, and tomato paste. Bring to a gentle simmer for around 5 minutes.
  4. Add thyme, bay leaves, salt, and pepper. Simmer gently for an additional 20–30 minutes.
  5. Taste and adjust seasoning as needed. Remove bay leaves before serving.
  6. Serve hot in bowls garnished with fresh parsley alongside crusty bread.
