- 8 oz dairy-free cream cheese
- 1 tbsp lemon juice
- 1 tsp vanilla extract
Instructions
- In a large bowl, combine warm almond milk, brown sugar, and yeast. Let it froth for about 5 minutes.
- In another bowl, whisk flour, cinnamon, and a pinch of salt together.
- Gradually mix the dry ingredients into the yeast mixture along with melted coconut oil until a sticky dough forms.
- Knead on a floured surface for about 5-7 minutes until smooth. Place in an oiled bowl, cover, and let rise for about 1 hour.
- While the dough rises, mix dairy-free cream cheese, lemon juice, vanilla extract, and sugar until smooth.
- Roll out the risen dough into a rectangle (½ inch thick), spread the cream cheese mixture evenly over it, and sprinkle diced apples on top.
- Roll up tightly from one long side into a log shape and cut into 12 even slices. Place cut-side up in a greased baking dish.
- Preheat oven to 350°F (175°C) and let the buns rise for another 30 minutes before baking for 25-30 minutes until golden brown.
