  • 1 ¼ cups water
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • ½ teaspoon salt
  • 8 oz sushi-grade salmon, diced
  • 2 tablespoons sriracha sauce (adjust to taste)
  • 1 ripe avocado, sliced
  • 4 nori sheets, cut into small squares
  • 2 green onions, finely chopped
  • 1 tablespoon toasted sesame seeds

Instructions

  1. Rinse the sushi rice under cold water until clear. Combine with water in a saucepan, bring to a boil, cover, and simmer for about 18 minutes or until absorbed.
  2. In a bowl, mix rice vinegar, sugar, and salt. Once rice is slightly cool, gently fold in the mixture using a wooden spatula.
  3. Preheat oven to 375°F (190°C). Lightly grease muffin tins and press sushi rice into each cup shape.
  4. Bake for 15-20 minutes or until golden brown. Monitor closely to avoid burning.
  5. Once cooled slightly, fill each cup with diced salmon mixed with sriracha and top with avocado slices.
  6. Garnish with green onions and sesame seeds before serving warm.
