- 6 oz pepperoni slices (about 24 slices)
- 4 medium flour tortillas
- 1 cup pizza sauce
- 2 cups shredded mozzarella cheese
- 1 small onion, diced
- Optional: 1/2 cup sliced black olives
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet over medium heat, brown the ground beef while breaking it apart. Add diced onions halfway through cooking until soft.
- Stir in pepperoni and cook for another few minutes until slightly crispy. Remove from heat and mix in half a cup of pizza sauce.
- Lay each tortilla flat and spoon two tablespoons of the meat mixture onto each. Sprinkle with shredded cheese and roll tightly.
- Place enchiladas seam-side down in a greased baking dish. Pour remaining pizza sauce on top and sprinkle with additional cheese.
- Cover with foil and bake for 20 minutes, then remove foil and bake an additional 10 minutes until golden brown.
