Ingredients

  • 3–4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 4 cups low-sodium chicken broth
  • 1 cup fresh carrots, diced
  • 1 cup fresh peas
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 can (10.5 oz) cream of chicken soup

Instructions

  1. Prep your ingredients: Chop the onion and dice the carrots.
  2. Add chicken breasts to the bottom of the crockpot.
  3. Layer in the rice, onion, garlic, carrots, peas, salt, pepper, and paprika evenly over the chicken.
  4. Pour the chicken broth over all ingredients and top with dollops of cream of chicken soup.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. Shred the chicken in the pot after cooking and stir everything together before serving.
