  • 4 boneless, skinless chicken breasts (1.5 lbs)
  • 3 tbsp extra virgin olive oil
  • 6 cloves garlic (minced)
  • 2 tsp ground cumin
  • 2 tsp smoked paprika
  • 2 tsp ground coriander
  • 1/2 tsp cayenne pepper (adjust to taste)
  • Juice of 1 lemon
  • 2 tbsp low-sodium soy sauce
  • 1 cup Greek yogurt
  • 1/2 cup mayonnaise
  • 1/4 cup fresh parsley or cilantro (finely chopped)
  • Zest of 1 lemon
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine olive oil, minced garlic, spices, lemon juice, and soy sauce. Add chicken breasts and coat well. Cover and refrigerate for at least one hour (or overnight).
  2. Preheat a grill pan over medium-high heat or an outdoor grill. Cook marinated chicken for about 6-7 minutes on each side until golden brown and fully cooked. Let rest before slicing.
  3. In a mixing bowl, combine yogurt, mayonnaise, herbs, lemon zest, salt, and pepper until smooth.
