- 8 corn tortillas
- 1 can (15 oz) black beans, drained and rinsed
- 2 cups salsa (store-bought or homemade)
- 2 cups shredded sharp cheddar cheese
- 1 cup chopped bell peppers (mixed colors)
- 1 cup chopped sweet onion
- 1/4 cup fresh cilantro (optional)
Instructions
- Preheat oven to 375°F (190°C) and spray a 9×13-inch baking dish with nonstick cooking spray.
- In a skillet over medium heat, brown ground beef for 7-10 minutes; drain excess fat and season with salt and pepper.
- Add chopped onions and bell peppers; sauté until softened (about 5 minutes). Mix in black beans and salsa until heated through.
- Spread a thin layer of salsa in the baking dish, layer tortillas, half the meat mixture, and cheese. Repeat layers, ending with tortillas topped with remaining salsa and cheese.
- Cover with foil and bake for 25 minutes; remove foil and bake an additional 15 minutes until bubbly and golden brown.
- Let cool slightly before slicing; garnish with cilantro or avocado if desired.
