Description

  • 1 lb lean ground beef
  • 8 corn tortillas
  • 1 can (15 oz) black beans, drained and rinsed
  • 2 cups salsa (store-bought or homemade)
  • 2 cups shredded sharp cheddar cheese
  • 1 cup chopped bell peppers (mixed colors)
  • 1 cup chopped sweet onion
  • 1/4 cup fresh cilantro (optional)

Instructions

  1. Preheat oven to 375°F (190°C) and spray a 9×13-inch baking dish with nonstick cooking spray.
  2. In a skillet over medium heat, brown ground beef for 7-10 minutes; drain excess fat and season with salt and pepper.
  3. Add chopped onions and bell peppers; sauté until softened (about 5 minutes). Mix in black beans and salsa until heated through.
  4. Spread a thin layer of salsa in the baking dish, layer tortillas, half the meat mixture, and cheese. Repeat layers, ending with tortillas topped with remaining salsa and cheese.
  5. Cover with foil and bake for 25 minutes; remove foil and bake an additional 15 minutes until bubbly and golden brown.
  6. Let cool slightly before slicing; garnish with cilantro or avocado if desired.
