- 8 large flour tortillas
- 2 cups enchilada sauce (store-bought or homemade)
- 2 cups shredded cheese (cheddar and Monterey Jack blend)
- 1 medium onion, chopped
- 3 cloves garlic, minced
- Fresh cilantro (optional for garnish)
Instructions
- In a skillet over medium heat, brown the ground beef until fully cooked. Add onions and garlic; sauté until onions are translucent.
- Warm the tortillas in a skillet or microwave until pliable.
- Spoon the beef mixture onto each tortilla, sprinkle with cheese, then roll tightly.
- Spread some enchilada sauce on the bottom of a baking dish. Place rolled tortillas seam-side down in the dish, cover with remaining sauce and cheese.
- Bake at 350°F (175°C) for 20 minutes, or until bubbly and golden.
