Description

Ground Beef Enchiladas are a delightful dish featuring savory ground beef wrapped in soft tortillas, smothered in enchilada sauce, and topped with melted cheese. Perfect for any gathering!


Ingredients

  • 1 lb lean ground beef
  • 8 large flour tortillas
  • 2 cups enchilada sauce (store-bought or homemade)
  • 2 cups shredded cheese (cheddar and Monterey Jack blend)
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • Fresh cilantro (optional for garnish)

Instructions

  1. In a skillet over medium heat, brown the ground beef until fully cooked. Add onions and garlic; sauté until onions are translucent.
  2. Warm the tortillas in a skillet or microwave until pliable.
  3. Spoon the beef mixture onto each tortilla, sprinkle with cheese, then roll tightly.
  4. Spread some enchilada sauce on the bottom of a baking dish. Place rolled tortillas seam-side down in the dish, cover with remaining sauce and cheese.
  5. Bake at 350°F (175°C) for 20 minutes, or until bubbly and golden.
