  • 3–4 boneless, skinless chicken breasts (about 1 lb)
  • 1 cup full-fat coconut milk
  • 1/4 cup freshly squeezed lime juice (about 2 limes)
  • 3 garlic cloves, minced
  • 1 cup jasmine rice
  • 1 cup bell peppers, chopped (mixed colors)
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by chopping bell peppers and green onions, mincing garlic, and cutting chicken into bite-sized pieces.
  2. In a large skillet over medium heat, sauté the chicken pieces in oil until golden brown (5-7 minutes).
