  • 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup long-grain white rice
  • 2 cups low-sodium chicken broth
  • 8 oz cream cheese
  • 1 packet ranch seasoning mix
  • 1 cup shredded cheddar cheese
  • 2 green onions, thinly sliced
  • 1/2 cup bacon bits (optional)

Instructions

  1. Place chicken breasts in the bottom of the crockpot and pour in chicken broth until lightly covered.
  2. Sprinkle ranch seasoning over the chicken.
  3. Layer the long-grain white rice on top without stirring.
  4. Cut cream cheese into cubes and scatter over the rice.
  5. Add more chicken broth until it reaches about an inch above the rice. Set crockpot to low for 6-7 hours or high for 3-4 hours.
  6. Once cooked, shred chicken directly in the pot using two forks and stir in shredded cheddar cheese until melted.
