  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped
  • 2 medium carrots, sliced
  • 2 stalks celery, chopped
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 4 cups low-sodium beef broth
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 cup small pasta shapes (optional)

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, parsley, garlic, Italian seasoning, salt, and pepper. Mix until just combined; do not overmix.
  2. In a large pot over medium heat, sauté onions, carrots, and celery in olive oil until softened (about 5 minutes).
  3. Add beef broth and diced tomatoes to the pot; bring to a gentle simmer.
  4. Carefully drop meatballs into the broth; cook until they float (15-20 minutes).
  5. Taste and adjust seasoning as needed. If using pasta, add it in the last 5-7 minutes of cooking.
  6. Serve hot with extra parsley or Parmesan.
