Ingredients

  • 4 boneless skinless chicken breasts (about 1.5 lbs)
  • 1 lb fresh green beans, trimmed
  • 1 lb baby Yukon Gold potatoes, halved
  • 3 tbsp extra virgin olive oil
  • 4 cloves garlic, minced
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp Italian herbs

Instructions

  1. Preheat oven to 400°F (200°C) and drizzle a large baking dish with olive oil.
  2. Season the chicken breasts with salt, pepper, paprika, and Italian herbs.
  3. Place the seasoned chicken in the center of the baking dish and surround it with green beans and halved potatoes.
  4. Sprinkle minced garlic over the chicken and vegetables.
  5. Bake for 25-30 minutes until the chicken reaches an internal temperature of 165°F (75°C) and everything is cooked through.
