- 1 cup tri-color quinoa
- 1 can (15 oz) black beans, rinsed
- 1 cup cherry tomatoes, chopped
- 1 bell pepper, diced
- 1 avocado, diced
- ½ red onion, finely chopped
- ½ cup fresh cilantro, chopped
- Juice of 2 limes
- ¼ cup extra virgin olive oil
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water until clear; cook in 2 cups of water for about 15 minutes until fluffy.
- While quinoa cooks, chop cherry tomatoes, bell pepper, red onion, and avocado.
- In a large bowl, combine cooled quinoa, black beans, chopped veggies, and cilantro.
- In a separate bowl, whisk together olive oil, lime juice, cumin, salt, and pepper.
- Pour dressing over the salad mixture; toss gently to combine.
- Chill in the fridge for at least 30 minutes before serving.
