  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup fresh bell peppers (diced, mixed colors)
  • ½ medium red onion (finely chopped)
  • 1 cup cherry tomatoes (halved)
  • 1 can (15 oz) black beans (rinsed and drained)
  • 1 ripe avocado (diced)
  • 4 cups romaine lettuce (chopped)
  • ½ cup sour cream or Greek yogurt
  • Juice of 2 limes
  • 2 tbsp taco seasoning

Instructions

  1. Season chicken breasts with taco seasoning on both sides. Grill over medium heat for 6-7 minutes per side until internal temperature reaches 165°F.
  2. While the chicken cools, dice bell peppers, red onion, cherry tomatoes, and avocado into bite-sized pieces.
  3. Tear or chop romaine lettuce into pieces and place at the bottom of a large salad bowl.
  4. Add rinsed black beans and dollops of sour cream or Greek yogurt on top of the lettuce.
  5. Squeeze fresh lime juice over the salad ingredients.
  6. Once the chicken is cooled, slice it into strips and place on top of the salad. Toss lightly if desired.
