  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 tbsp olive oil
  • Juice of 2 limes
  • 1 tsp chili powder
  • 1 tsp cumin
  • 4 cups mixed greens (romaine and spinach)
  • 1 cup cherry tomatoes (halved)
  • 1 cup corn (fresh or frozen)
  • 1 ripe avocado (diced)
  • ½ cup sour cream
  • ½ cup Greek yogurt
  • 2 tbsp Dijon mustard

Instructions

  1. Preheat grill or skillet to medium-high heat. Brush chicken breasts with olive oil and season with salt, chili powder, and cumin. Grill for 6-7 minutes per side until cooked through (internal temperature of 165°F). Allow to cool before slicing.
  2. In a large bowl, combine mixed greens, cherry tomatoes, corn, and diced avocado.
  3. In a separate bowl, mix sour cream, Greek yogurt, Dijon mustard, and lime juice until smooth.
  4. Add sliced chicken atop the veggie mixture and drizzle with dressing. Toss gently to combine.
  5. Serve immediately or refrigerate components separately until ready to enjoy.
