- 2 tbsp extra virgin olive oil
- 3 tbsp fresh lemon juice
- 2 cloves garlic, minced
- 1 cup cucumber, diced
- 1 cup cherry tomatoes, halved
- ½ cup parsley, chopped
- ½ cup cilantro, chopped
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Rinse and drain the chickpeas; pat dry.
- In a bowl, toss chickpeas with olive oil, garlic, salt, and pepper until well coated.
