  • 1 can (15 oz) low-sodium chickpeas, rinsed and drained
  • 2 tbsp extra virgin olive oil
  • 3 tbsp fresh lemon juice
  • 2 cloves garlic, minced
  • 1 cup cucumber, diced
  • 1 cup cherry tomatoes, halved
  • ½ cup parsley, chopped
  • ½ cup cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Rinse and drain the chickpeas; pat dry.
  3. In a bowl, toss chickpeas with olive oil, garlic, salt, and pepper until well coated.
  4. Spread the seasoned chickpeas on a lined baking sheet and roast for 25-30 minutes until crispy.
  5. While chickpeas roast, prepare cucumber, tomatoes, and herbs.
  6. Once roasted, let chickpeas cool slightly before layering over greens or grains in bowls.
  7. Top with cucumber, tomatoes, herbs, and a drizzle of fresh lemon juice.
