  • 4 salmon fillets (6 oz each)
  • 3 tbsp olive oil
  • 3 tbsp freshly squeezed lemon juice
  • 2 tbsp fresh dill, chopped
  • Salt and pepper to taste
  • 1 large cucumber, thinly sliced
  • 1/2 red onion, thinly sliced

Instructions

  1. In a bowl, whisk together olive oil, lemon juice, chopped dill, salt, and pepper.
  2. Place salmon fillets in a shallow dish and pour marinade over them. Marinate for at least 30 minutes.
  3. Preheat grill to medium-high heat. Grill salmon skin-side down for 6-8 minutes per side until cooked through.
  4. While salmon grills, toss cucumber slices, red onion, remaining dill, olive oil, salt, and pepper in another bowl.
