  • 4 boneless, skinless chicken breasts (about 1 lb)
  • 1 lb fresh asparagus, trimmed and cut into bite-sized pieces
  • 4 cloves garlic, minced
  • ¼ cup freshly squeezed lemon juice
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 tbsp cornstarch (optional)

Instructions

  2. Heat olive oil in a large skillet over medium heat. Sauté chicken pieces for about 5-7 minutes until golden brown and cooked through.
  3. Add minced garlic and asparagus to the skillet, cooking for another 3-4 minutes until asparagus is bright green and tender-crisp.
  4. In a bowl, mix lemon juice, soy sauce, salt, pepper, and cornstarch if using. Pour over the chicken and asparagus.
  5. Simmer for an additional 2-3 minutes until the sauce thickens slightly.
