  • 1 cup long-grain white rice
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 and ¾ cups low-sodium chicken broth
  • Juice of 1 lime (approximately 2 tablespoons)
  • ½ cup fresh cilantro, chopped
  • Salt, to taste

Instructions

  1. Rinse the rice under cold water until the water runs clear to remove excess starch.
  2. In a medium saucepan over medium heat, heat olive oil. Add minced garlic and sauté for about 30 seconds until fragrant.
  3. Pour in chicken broth and add salt. Bring to a rolling boil.
  4. Stir in the rinsed rice, cover tightly with a lid, and reduce heat to low. Simmer undisturbed for about 18-20 minutes or until all liquid is absorbed.
  5. Remove from heat and let sit for 5 minutes. Fluff with a fork before gently folding in lime juice and chopped cilantro.
  6. Serve warm as a side dish or as part of a refreshing salad.
