  • 4 whole garlic bulbs
  • 2 tablespoons olive oil (divided)
  • 1 medium onion, diced
  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream (or plant-based alternative)
  • 1 cup fresh thyme leaves

Instructions

  1. Preheat oven to 400°F (200°C). Slice off tops of garlic bulbs, drizzle with 1 tablespoon olive oil, wrap in foil, and roast for 30-35 minutes until golden brown.
  2. In a large pot, heat remaining olive oil over medium heat. Sauté diced onions until translucent (about 5-7 minutes).
  3. Squeeze roasted garlic cloves into the pot. Add vegetable broth and simmer for 10-15 minutes.
  4. Stir in fresh thyme leaves and let infuse for 5 minutes. Blend the mixture until smooth using an immersion blender.
  5. Return blended soup to low heat and gently stir in heavy cream. Adjust seasoning as needed before serving hot.
