  • 1 lb ground lamb or beef
  • 2 lbs potatoes (Russet)
  • 1 cup carrots, diced
  • 1 cup frozen peas
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup low-sodium chicken or vegetable broth
  • 4 tbsp butter
  • 1/4 cup heavy cream
  • 1 tsp fresh thyme
  • 1 tsp fresh rosemary
  • Salt and pepper to taste

Instructions

  1. 1. Prepare the Potatoes: Peel and cube the potatoes. Boil in salted water until fork-tender, about 15-20 minutes. Drain and mash with butter, cream, salt, and pepper.
  2. 2. Sauté the Veggies: In a skillet over medium heat, melt butter and sauté onions and garlic until translucent (3-5 minutes).
  3. 3. Add the Meat: Stir in ground meat; cook until browned (8-10 minutes).
  4. 4. Add Vegetables & Seasoning: Mix in carrots, peas, herbs, broth, salt, and pepper; simmer for 5-7 minutes.
  5. 5. Assemble & Bake: In a casserole dish, layer the meat mixture and top with mashed potatoes. Bake at 400°F for 25-30 minutes until golden brown.
