- 8 oz rotini pasta
- 1 cup cherry tomatoes, halved
- 1 cup English cucumber, diced
- 1 cup bell peppers (any color), chopped
- 1/2 cup red onion, thinly sliced
- 1/2 cup crumbled feta cheese
- 3 tbsp extra-virgin olive oil
- 2 tbsp freshly squeezed lemon juice
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Cook the pasta al dente in salted boiling water according to package instructions. Drain and rinse under cold water.
- While the pasta cools, chop the cherry tomatoes, cucumber, bell peppers, and slice the red onion.
- In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
- In a large bowl, combine the cooled pasta with the chopped veggies and feta cheese. Drizzle with dressing and toss until evenly coated.
- Chill in the refrigerator for at least 30 minutes before serving.
