Ingredients

  • 8 oz rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup English cucumber, diced
  • 1 cup bell peppers (any color), chopped
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 3 tbsp extra-virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the pasta al dente in salted boiling water according to package instructions. Drain and rinse under cold water.
  2. While the pasta cools, chop the cherry tomatoes, cucumber, bell peppers, and slice the red onion.
  3. In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
  4. In a large bowl, combine the cooled pasta with the chopped veggies and feta cheese. Drizzle with dressing and toss until evenly coated.
  5. Chill in the refrigerator for at least 30 minutes before serving.
