- 4 large Russet potatoes
- 1 cup sharp cheddar cheese, shredded
- 6 slices thick-cut bacon, cooked and crumbled
- 4 green onions, sliced
- 1 cup sour cream
- 1/2 cup unsalted butter, melted
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Preheat oven to 400°F (200°C). Scrub potatoes and poke with a fork.
- Bake potatoes directly on the oven rack for 45-60 minutes until tender.
- Once cooled slightly, halve the potatoes and scoop out the insides into a bowl.
- Mix potato flesh with melted butter, sour cream, salt, pepper, half of the cheese, and most of the bacon until smooth yet chunky.
- Spoon mixture back into potato skins or an oiled baking dish. Top with remaining cheese and reserved bacon.
- Bake again for 20-25 minutes until bubbly and golden brown. Garnish with green onions before serving.
