- 1 cup lobster meat (fresh or frozen)
- 1 pre-made pie crust (or homemade)
- 1 cup heavy cream
- 1/2 cup diced carrots
- 1/2 cup frozen peas
- 1/2 cup diced celery
- 2 tbsp butter
- 2 cloves garlic (minced)
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1 tsp Old Bay seasoning
- 1 tbsp lemon juice
Instructions
- Preheat oven to 400°F (200°C).
- In a skillet, melt butter over medium heat. Add carrots, celery, and peas; sauté for about 5 minutes until tender.
- Stir in minced garlic and cook for an additional minute. Add lobster meat and sauté for another 2–3 minutes.
- Pour in heavy cream and bring to a simmer. Season with salt, pepper, thyme, and Old Bay seasoning. Add lemon juice and stir well.
- Pour the filling into a pie crust-lined baking dish. Cover with another pie crust, cutting slits for steam to escape.
- Bake for 25–30 minutes until golden brown.
