Ingredients

  • 2 large Russet potatoes
  • 1 lb sirloin or ribeye steak, cut into bite-sized pieces
  • 1 cup shredded sharp cheddar cheese
  • ½ cup sour cream
  • ¼ cup bacon bits
  • 2 tablespoons chopped chives or green onions
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C). Scrub the potatoes clean and poke holes all over each one with a fork.
  2. Rub the potatoes with olive oil, sprinkle generously with salt, and place directly on the oven rack. Bake for 45-60 minutes until tender.
  3. While baking, heat olive oil in a skillet over medium-high heat. Sear the steak pieces until browned, about 4-5 minutes.
  4. Once potatoes are done, slice them open lengthwise and fluff the insides with a fork. Add butter first, then load with cheese, steak bites, bacon bits, sour cream, and chives.
