Ingredients

  • 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup long grain rice
  • 6 cups low-sodium chicken broth
  • 8 oz cream cheese
  • 1 packet dried onion soup mix
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 tsp garlic powder
  • Salt and black pepper to taste

Instructions

  1. Dice carrots and celery into small pieces; set aside.
  2. In a large pot over medium heat, add olive oil and sear chicken breasts until golden brown (about 5 minutes per side).
  3. Pour in chicken broth and onion soup mix; stir well and add chopped vegetables.
  4. Once simmering, stir in rice and cream cheese until melted.
  5. Cover and simmer on low for 20-25 minutes until rice is tender.
  6. Shred chicken using two forks; return to pot and stir before serving.
