  • 3 boneless, skinless chicken breasts (about 1 lb)
  • 2 cloves fresh garlic, minced
  • 1 cup panko breadcrumbs
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 4 slices sourdough bread
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 375°F (190°C) and season chicken breasts with salt and pepper.
  2. Heat olive oil in a skillet over medium heat. Sauté garlic until fragrant.
  3. Add chicken; cook for about 6 minutes per side until golden brown and cooked through. Let rest before slicing thinly.
  4. Coat each slice of chicken in panko breadcrumbs mixed with Parmesan cheese.
  5. In the same skillet, fry the breaded chicken slices for about 3 minutes per side until golden brown.
  6. Assemble sandwiches by spreading marinara on one slice of sourdough, layering with chicken and mozzarella, then topping with another slice.
  7. Grill sandwiches over medium-low heat with butter or olive oil until both sides are golden brown and cheese melts (about 4 minutes per side).
  8. Serve hot with extra marinara for dipping.
