- 4–6 bone-in chicken thighs
- 4 cloves fresh garlic, minced
- 1 cup mixed bell peppers, sliced
- 1 medium yellow onion, sliced
- 2 tbsp brown sugar
- 1/4 cup low-sodium soy sauce
- 2 tsp fresh thyme (or 1 tsp dried thyme)
- Salt and pepper to taste
- 2 tbsp cooking oil (for searing)
Instructions
- Chop garlic, slice onions and bell peppers, and wash chicken.
- In a bowl, season chicken thighs with salt, pepper, minced garlic, and thyme; marinate for at least 30 minutes.
- Heat oil in a large pot over medium heat. Sear chicken thighs skin-side down until golden brown (about 5 minutes per side). Remove from pot.
- In the same pot, add onions and bell peppers; cook until softened (3-4 minutes).
- Stir in brown sugar and soy sauce with water or chicken broth; bring to a gentle simmer.
- Return chicken to the pot; cover and simmer on low heat for about 45 minutes until tender.
