  • 1 lb shrimp (peeled and deveined)
  • 1/4 cup extra virgin olive oil
  • 1/4 cup freshly squeezed lemon juice
  • 4 cloves garlic (minced)
  • 1/4 cup fresh parsley or cilantro (chopped)
  • 1 tsp paprika
  • 1/2 tsp red pepper flakes (adjust to taste)
  • Salt and pepper to taste

Instructions

  1. If using frozen shrimp, thaw them in cold water and pat dry with paper towels.
  2. In a mixing bowl, whisk together olive oil, lemon juice, minced garlic, chopped herbs, paprika, red pepper flakes, salt, and pepper.
  3. Place shrimp in a resealable bag or container and pour the marinade over them. Seal tightly and refrigerate for at least 30 minutes but no longer than 2 hours.
  4. Preheat grill or skillet over medium-high heat. Cook marinated shrimp for about 2-3 minutes per side until pink and opaque.
  5. Serve immediately with lemon wedges alongside rice or salad.
