- 4 cups mixed fresh veggies (lettuce, bell peppers, carrots)
- 1/2 cup fresh cilantro
- 1/2 cup chopped peanuts
- 1/4 cup lime juice
- 2 tbsp soy sauce
- 1 tbsp honey
- 1 tbsp sesame oil
- 1 tsp sriracha sauce (adjust to taste)
Instructions
- Boil water in a large pot. Add chicken breasts and cook for about 15-20 minutes until fully cooked through. Shred the chicken once slightly cooled.
- In a bowl, whisk together lime juice, soy sauce, honey, sesame oil, and sriracha to make the dressing.
- Chop mixed veggies into bite-sized pieces.
- In a large bowl, combine shredded chicken, chopped veggies, and cilantro. Drizzle dressing over the mixture and toss gently.
- Sprinkle chopped peanuts on top before serving.
