Ingredients

  • 8 corn tortillas
  • 2 cups enchilada sauce
  • 1 cup shredded cheddar cheese
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tbsp olive oil
  • ½ cup sour cream (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat. Sauté onions until translucent; add garlic and cook until fragrant.
  3. Stir in ground beef, cumin, and chili powder. Cook until browned, breaking it apart with a spatula.
  4. Warm tortillas in the microwave for easy rolling.
  5. Spoon beef mixture into each tortilla, roll tightly, and place seam-side down in a baking dish.
