  • 3 cloves fresh garlic, minced
  • 4 green onions, chopped
  • 1 cup bell peppers, diced (any color)
  • 8 large butter or iceberg lettuce leaves
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tsp Sriracha (optional)

Instructions

  1. Dice the chicken into small pieces and mince the garlic.
  2. Heat oil in a skillet over medium heat, add chicken, and cook until golden brown (7-10 minutes).
  3. Stir in minced garlic and chopped green onions; cook for 2 minutes.
  4. Add diced bell peppers and sauté for another 3-4 minutes.
  5. Whisk together soy sauce, sesame oil, rice vinegar, and optional Sriracha; pour over chicken mixture and heat through for 2 minutes.
