- Salt & pepper to taste
- 2 tbsp fresh parsley (chopped)
- 2 tbsp low-sodium soy sauce
- 3 tbsp brown sugar
- 1 tsp mustard (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, mix ground beef, breadcrumbs, egg, garlic, onion, salt, and pepper until combined.
- Shape the mixture into tablespoon-sized meatballs and place on a parchment-lined baking sheet.
- Bake for 20-25 minutes until golden brown and cooked through (internal temperature of 160°F).
- Meanwhile, combine cranberry sauce, soy sauce, brown sugar, and mustard in a saucepan over medium heat; stir until blended.
- Once baked, add meatballs to the saucepan and coat evenly with the sauce; simmer for about 5 minutes before serving.
- Garnish with fresh parsley before serving.
