- 1 whole chicken (4–5 pounds)
- 2 fresh lemons
- 1/4 cup fresh rosemary
- 1/4 cup fresh thyme
- 1/4 cup fresh parsley
- 6 garlic cloves (minced)
- 1/4 cup extra virgin olive oil
- 2 tsp sea salt
- 1 tsp freshly cracked black pepper
- Zest of 1 lemon
Instructions
- Preheat your oven to 425°F (220°C).
- Pat the chicken dry with paper towels.
- In a bowl, mix olive oil, minced garlic, lemon zest, chopped herbs, salt, and pepper.
- Rub the mixture generously over the chicken and inside the cavity.
- Cut one lemon into wedges and place it inside the cavity along with leftover herb sprigs.
- Place the chicken breast-side up in a roasting pan and add remaining lemon wedges around.
- Roast for about 1 hour and 15 minutes or until the internal temperature reaches 165°F (75°C).
- Let the chicken rest for at least 10 minutes before carving.
