  • 1 whole chicken (45 pounds)
  • 2 fresh lemons
  • 1/4 cup fresh rosemary
  • 1/4 cup fresh thyme
  • 1/4 cup fresh parsley
  • 6 garlic cloves (minced)
  • 1/4 cup extra virgin olive oil
  • 2 tsp sea salt
  • 1 tsp freshly cracked black pepper
  • Zest of 1 lemon

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken dry with paper towels.
  3. In a bowl, mix olive oil, minced garlic, lemon zest, chopped herbs, salt, and pepper.
  4. Rub the mixture generously over the chicken and inside the cavity.
  5. Cut one lemon into wedges and place it inside the cavity along with leftover herb sprigs.
  6. Place the chicken breast-side up in a roasting pan and add remaining lemon wedges around.
  7. Roast for about 1 hour and 15 minutes or until the internal temperature reaches 165°F (75°C).
  8. Let the chicken rest for at least 10 minutes before carving.
