Description

Ingredients

  • 4 cups fresh spinach
  • 2 cups cooked fusilli pasta
  • 1 cup crumbled feta cheese
  • 1 cup dried cranberries (unsweetened)
  • 3 tbsp extra virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 tbsp honey
  • Salt and pepper to taste

Instructions

  1. Boil a large pot of salted water and cook the fusilli until al dente (8-10 minutes). Drain and rinse under cold water.
  2. In a mixing bowl, combine the cooled pasta with fresh spinach.
  3. Add dried cranberries and crumbled feta to the bowl.
  4. Drizzle olive oil, red wine vinegar, and honey over the mixture. Toss gently to coat.
  5. Season with salt and pepper to taste, then serve chilled or at room temperature.
