- 10 sheets phyllo dough
- 1 lb large raw shrimp, peeled and deveined
- 1 ripe avocado, diced
- 2 cloves garlic, minced
- 1 tsp red pepper flakes
- Juice of 1 lime
- ¼ cup fresh cilantro, chopped
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a muffin tin.
- Layer and cut phyllo dough into squares. Press into muffin tin holes to form cups. Bake for 10 minutes until golden brown.
- In a skillet over medium heat, heat olive oil. Add garlic; sauté for 1 minute.
- Add shrimp and red pepper flakes; cook until shrimp turn pink (about 3-4 minutes). Stir in lime juice.
- Remove from heat and fold in diced avocado and cilantro.
- Spoon the shrimp mixture into baked phyllo cups and serve immediately.
