- 8 oz penne pasta
- 8 oz cream cheese (full-fat)
- 2 tbsp Cajun seasoning
- 1 cup shredded sharp cheddar cheese
- 3 cloves fresh garlic, minced
- 1 cup low-sodium chicken broth
Instructions
- Preheat oven to 350°F (175°C).
- Cook penne pasta in boiling salted water until al dente (about 8 minutes). Drain and set aside.
- In a skillet, heat oil over medium-high heat. Sear chicken breasts for about 6 minutes per side until golden brown and cooked through. Remove from skillet and dice.
- In the same skillet, add minced garlic; cook until fragrant (about 1 minute). Stir in cream cheese and chicken broth until smooth.
- Mix in Cajun seasoning, then combine the sauce with the drained pasta and diced chicken.
- Layer half of the mixture in a baking dish; top with half of the cheddar cheese. Repeat layers.
