  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 (14.5 oz) cans fire-roasted diced tomatoes
  • 1 (15 oz) can kidney beans, drained and rinsed
  • 1 cup buffalo sauce
  • 2 cups low-sodium chicken broth
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp dried oregano

Instructions

  1. Dice onion and bell peppers; mince garlic.
  2. In a large pot over medium heat, sauté onion and bell peppers in olive oil until softened (about 5 minutes).
  3. Add minced garlic; cook for an additional minute.
  4. Stir in chicken breasts whole; cook until slightly golden.
  5. Add diced tomatoes and drained beans; mix well.
  6. Pour in buffalo sauce and chicken broth; stir to combine.
  7. Add spices (cumin, chili powder, oregano) and bring to a simmer.
  8. Cover partially and simmer for 20-30 minutes until flavors meld.
  9. Taste and adjust seasoning as needed before serving.
