- 2 lbs beef chuck roast, cut into cubes
- 1 medium onion, chopped
- 8 oz fresh mushrooms, sliced
- 3 cloves garlic, minced
- 2 cups low-sodium beef broth
- 1 cup full-fat sour cream
- 2 tbsp Worcestershire sauce
- 12 oz egg noodles
- 1 tsp smoked paprika
- Salt and pepper to taste
Instructions
- Brown the beef in a skillet over medium heat, seasoning with salt and pepper for about 4-5 minutes until golden.
- Add chopped onion and garlic to the skillet, cooking until fragrant (2-3 minutes).
- Transfer the mixture to a slow cooker and add mushrooms, beef broth, Worcestershire sauce, paprika, salt, and pepper. Stir well.
- Cover and cook on low for 6-8 hours.
- About 30 minutes before serving, stir in sour cream until fully incorporated.
- Serve over cooked egg noodles or rice.
