Description

Ingredients

  • 2 lbs beef chuck roast, cut into cubes
  • 1 medium onion, chopped
  • 8 oz fresh mushrooms, sliced
  • 3 cloves garlic, minced
  • 2 cups low-sodium beef broth
  • 1 cup full-fat sour cream
  • 2 tbsp Worcestershire sauce
  • 12 oz egg noodles
  • 1 tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Brown the beef in a skillet over medium heat, seasoning with salt and pepper for about 4-5 minutes until golden.
  2. Add chopped onion and garlic to the skillet, cooking until fragrant (2-3 minutes).
  3. Transfer the mixture to a slow cooker and add mushrooms, beef broth, Worcestershire sauce, paprika, salt, and pepper. Stir well.
  4. Cover and cook on low for 6-8 hours.
  5. About 30 minutes before serving, stir in sour cream until fully incorporated.
  6. Serve over cooked egg noodles or rice.
