  • 2 tbsp sesame oil
  • 2 tsp fresh ginger, grated
  • 2 green onions, chopped
  • 1 cup jasmine rice
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp honey
  • 2 garlic cloves, minced
  • 1 tbsp rice vinegar

Instructions

  1. Preheat oven to 400°F (200°C). In a large bowl, combine ground chicken, garlic, ginger, green onions, sesame oil, salt, and pepper; mix until just combined.
  2. Form small meatballs (about 1 inch) and place them on a parchment-lined baking sheet.
  3. Bake for 20 minutes or until golden brown.
  4. While baking, whisk soy sauce, honey, rice vinegar, and garlic in a saucepan over medium heat; simmer until slightly thickened.
  5. Toss cooked meatballs in the sauce until well coated.
  6. Serve over cooked jasmine rice and garnish with extra green onions.
