Instructions

  1. Prepare your ingredients by chopping the mushrooms and onion, and mincing the garlic.
  2. In a large skillet, heat olive oil over medium heat. Sauté onions until translucent (3-4 minutes).
  3. Add mushrooms and garlic, cooking until mushrooms are golden brown (5-7 minutes).
  4. Stir in rice to toast for 1-2 minutes.
  5. Pour in vegetable broth, season with salt and pepper, and bring to a boil. Reduce heat to low, cover, and simmer for 15-20 minutes until liquid is absorbed.
  6. After cooking, let sit covered for 5 minutes before fluffing with a fork.
