  • 34 boneless, skinless chicken breasts (about 1 pound)
  • 8 ounces penne pasta
  • 1 cup fresh asparagus, cut into 1-inch pieces
  • 1 cup sliced mushrooms (button or cremini)
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 cup low-sodium chicken broth
  • 2 tablespoons low-sodium soy sauce
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Season the chicken breasts with salt and pepper, then cook until golden brown on both sides (about 6 minutes per side) until reaching an internal temperature of 165°F. Remove from skillet and set aside.
  2. In the same skillet, add sliced mushrooms and asparagus. Sauté for about 4 minutes until mushrooms are browned and asparagus is bright green.
  3. Pour in chicken broth and soy sauce; stir in minced garlic and let it cook for about 1 minute.
  4. Cook penne pasta according to package instructions until al dente. Drain, reserving some pasta water.
  5. Add cooked penne to the skillet with vegetables and sauce, tossing gently to combine. Add reserved pasta water as needed for creaminess.
  6. Grate Parmesan cheese over the top while mixing everything together. Serve hot.
