  • 3 cloves fresh garlic, minced
  • 1 green bell pepper, diced
  • 1 medium yellow onion, diced
  • 2 tsp chili powder
  • 1 tsp cumin
  • 2 cups freshly grated cheddar cheese
  • 1 cup heavy cream (or half-and-half)
  • 2 tbsp olive oil
  • Fresh cilantro (optional, for garnish)

Instructions

  1. Prep ingredients by washing and dicing the bell pepper and onion; mince the garlic.
  2. Heat olive oil in a large skillet over medium-high heat. Season chicken breasts and sear for about 5-6 minutes per side until golden brown and cooked through.
  3. Remove the chicken and set aside. In the same skillet, sauté onions and peppers until translucent (3-4 minutes).
  4. Stir in garlic, chili powder, and cumin; cook until fragrant (30 seconds).
  5. Lower heat, gradually add heavy cream while stirring continuously. Then sprinkle in cheese slowly until melted.
  6. Slice the chicken into strips and return to the skillet; gently fold everything together until coated in sauce.
  7. Serve hot, garnished with chopped cilantro if desired.
