- 2 tbsp fresh parsley, chopped

- 1 cup small pasta (Acini di Pepe or Orzo)
- 2 tbsp olive oil

Instructions
- In a large bowl, combine ground chicken with breadcrumbs, minced garlic, parsley, egg, salt, and pepper. Shape into small meatballs about one inch in diameter.
- Heat olive oil in a large pot over medium heat. Add chopped onion and carrots; sauté until softened and onions are translucent.

- Gently drop meatballs into simmering broth and cook for about 10 minutes until they float.
