Ingredients
- 3–4 boneless, skinless chicken breasts
- 1 cup long-grain rice (rinsed)
- 2 cups low-sodium chicken broth
- 2 tbsp extra virgin olive oil
- 1 medium onion (finely chopped)
- 3 garlic cloves (minced)
- 1 cup mixed frozen vegetables
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp paprika
- 2 tbsp low-sodium soy sauce
- 2 tbsp fresh lemon juice
Instructions
- Set the Instant Pot to sauté mode and heat olive oil. Add chopped onion; cook until softened.
- Stir in minced garlic and sauté for 30 seconds.
- Add chicken breasts, salt, pepper, and paprika; sear both sides for about four minutes until golden brown.
- Pour in rinsed rice and chicken broth; stir gently to prevent sticking.
- Mix in frozen vegetables, soy sauce, and lemon juice.
- Seal the lid and cook on high pressure for 10 minutes followed by a natural release for 5 minutes before a quick release.
