- 2 pounds beef chuck roast, cut into 2-inch pieces
- 1 bottle (750 ml) dry red wine (preferably Pinot Noir)
- 2 cups low-sodium beef broth
- 4 ounces thick-cut bacon lardons
- 8 ounces button or cremini mushrooms, sliced
- 3 large carrots, sliced thick
- 2 medium yellow onions, chopped
- 4 garlic cloves, minced
- 3 sprigs fresh thyme
- 2 bay leaves
- Salt and pepper to taste
Instructions
- Preheat your Dutch oven over medium heat. Cook bacon until crispy; remove and set aside.
- In the same pot, sear beef chunks until golden brown on all sides. Remove and set aside.
- Sauté onions and carrots in the pot until onions are translucent.
- Stir in garlic and mushrooms; cook until mushrooms soften.
- Deglaze with red wine, scraping up browned bits. Simmer for about 10 minutes.
- Return bacon and beef to the pot along with beef broth, thyme, and bay leaves. Bring to a boil then reduce heat to a simmer.
- Cover partially and simmer for 2-3 hours until beef is fork-tender, stirring occasionally.
- Season with salt and pepper before serving over mashed potatoes or with crusty bread.
