  • 1 lb beef sirloin, thinly sliced
  • 2 tbsp freshly cracked black pepper
  • 4 tbsp low-sodium soy sauce
  • 3 cloves garlic, minced
  • 1 medium sweet onion, sliced
  • 2 tbsp vegetable oil
  • 2 green onions, chopped
  • 1 tbsp cornstarch mixed with 2 tbsp water
  • 1 tsp sesame oil
  • Optional: pinch of cayenne pepper

Instructions

  1. Cook udon noodles in boiling salted water according to package instructions until al dente. Drain and rinse under cold water.
  2. In a hot pan over medium-high heat, add vegetable oil and sear beef slices for about 3-4 minutes until browned.
  3. Add minced garlic and sliced onion; stir until onions are translucent (2-3 minutes).
  4. Whisk together soy sauce, cornstarch mixture, sesame oil, and black pepper in a bowl; pour into the pan and stir until thickened.
  5. Toss in cooked udon noodles and green onions; mix gently until well-coated.
  6. Serve hot with extra green onions or black pepper as garnish.
