Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup BBQ sauce (store-bought or homemade)
  • 2 large sweet potatoes, diced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • Juice of 1 lemon

Instructions

  1. Preheat oven to 400°F (200°C). Season chicken with salt, pepper, smoked paprika, and garlic powder; let marinate.
  2. Toss diced sweet potatoes in olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until golden.
  3. Grill marinated chicken over medium-high heat for about 6-7 minutes per side until cooked through (165°F/75°C). Brush with BBQ sauce during the last minute.
  4. Slice chicken and layer it over roasted sweet potatoes in bowls. Drizzle with additional BBQ sauce and sprinkle with fresh parsley.
