Description

Grilled Elote Steak Tacos are a vibrant summer dish bursting with flavor. Ingredients

  • 1 lb skirt steak
  • 2 ears fresh corn on the cob
  • 1 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 2 tsp chili powder
  • Salt and pepper, to taste
  • 8 corn tortillas

Instructions

  1. Marinate the skirt steak in lime juice, chili powder, salt, and pepper for at least 30 minutes.
  2. While the steak marinates, husk the corn and grill over medium heat for 10-15 minutes until charred.
  3. Preheat the grill to high heat and grill the marinated steak for 4-5 minutes per side until medium-rare.
  4. Let the steak rest before slicing against the grain into thin strips.
  5. Warm tortillas on the grill, then layer with sliced steak, grilled corn kernels, cilantro, and an extra squeeze of lime before serving.
